- 500 Gram, Basmati Rice (long grain)
- 1 kg Chicken thighs (boneless)
- 50 gm sliced onion
- 25 ml lemon juice
- 200 gm ghee
- 100 ml fresh cream
- 5 ml Rosewater
- 1/2 liter Water
- 250 gm beaten yogurt (curd)
- 25 gm ginger paste
- 25 gm Garlic paste
- 10 gm clove
- 10 gm bay leaf
- 10 gm Cinnamon stick
- 5 gm black cumin seeds
- 2 teaspoon Green cardamon Powder
- 7 gm mace powder
For marinating the chicken
- 250 gm yogurt (curd)
- 25 gm ginger paste
- 25 gm garlic paste
- 1/2 teaspoon turmeric powder
- 3 teaspoon coriander powder
- 1 teaspoon powdered red chili
- 1 teaspoon cumin powder
- 1 teaspoon cardamom powder
For preparing the Dough
- 100gm Wheat Flour
- 1 finely chopped onion (Medium Size)
- 50 gm Mint Leaves
- 6 strand soaked saffron
Biryani is a classic mughlai dish and Dum style is nothing but cooking in low flame for a long time which tends to bring out the flavors of the rich spices and the meat in a very delicate way. The total time needed to prepare this dish will be like 1 hour plus 15 minutes of cooking time. So let’s prepare Chicken Dum Biryani step by step.
- To prepare this Mughal delicacy start by marinating the chicken. For marinating the chicken take a large bowl to add yogurt (curd), half teaspoon of turmeric powder, 1 teaspoon of red chili powder, coriander powder, cumin powder and ginger garlic paste into it and mix well. After mixing all the ingredients add the pieces of chicken into the bowl and let it marinate about an hour. Once the chicken is marinated add the slices of finely chopped onion and a pinch of salt.
- Now to cook the chicken, take a large vessel made of copper and put in on the oven at medium heat. When the vessel is heated pour ghee and all the whole spices into it and wait till it starts crackling. Saute the spices and add the pieces of marinated chicken and sauté it as well.
- After that add the finely chopped onions, ginger garlic paste and sauté them again for a minute till the color changes.
- Add the remaining yogurt (curd) into the vessel and fry well till the oil separates from the chicken. Once when the oil starts separating add 1 teaspoon of cardamom powder and mace powder and sauté it for about a minute and then add water. Put the lid of the vessel and leave the chicken to cook on low flame.
- In the meanwhile take another vessel and boil the water of preparing the rice. Add the whole spices, lemon juice, and salt into the water. Once when the water starts boiling add the soaked basmati rice into it and wait till it cooked well.
- Now open the lid of the copper vessel and layer the rice on top of the cooked chicken. Upon that layer add ghee and cream nicely. For the final layer, garnish it with the strands of saffron, rose water, thin slices of onion and mint leaves.
- Once you have finished the layering, cover the lid of the copper vessel and seal it with the dough that you have already prepared. Let it cook for another 15 minutes and your Chicken Dum Biryani is ready to be served.
